Osso Bucco Tortelloni with Sage Butter

These beautiful fresh handmade tortelloni are filled with slow-cooked osso bucco (veal shank). The filling is so rich and full of flavour that all they need is a simple dressing of melted butter and sage leaves.

250g osso bucco tortelloni
- 50g butter
- 6-8 sage leaves
- Grated Parmesan to serve

- Step 1, Cook the pasta in boiling salted water for 2 minutes.
- Step 2, In a frying pan large enough to hold the pasta, melt the butter and add the sage leaves for a minute or so to infuse their flavour.
- Step 3, Add the pasta with a splash of the cooking water and shake and stir the pan to emulsify.
- Step 4, Serve immediately with Parmesan.
