These beautiful fresh handmade tortelloni are filled with slow-cooked osso bucco (veal shank). The filling is so rich and full of flavour that all they need is a simple dressing of melted butter and sage leaves.

    • 250g osso bucco tortelloni

    • 50g butter
    • 6-8 sage leaves
    • Grated Parmesan to serve

      1. Step 1, Cook the pasta in boiling salted water for 2 minutes.
      2. Step 2, In a frying pan large enough to hold the pasta, melt the butter and add the sage leaves for a minute or so to infuse their flavour.
      3. Step 3, Add the pasta with a splash of the cooking water and shake and stir the pan to emulsify.
      4. Step 4, Serve immediately with Parmesan.
