Salmon Tartare with Finger Lime and Shiso Leaves

1 sushi grade salmon supreme, skinned and diced
- 3 finger limes
- 1 red chilli finely chopped

1 punnet shisho leaves
- 1 spring onion finely sliced

2 teaspoons soy sauce
Directions
Method
- Step 1, Combine the diced salmon, finger lime flesh, red chilli, spring onions and soy and mix well.
- Step 2, Arrange shiso leaves on a plate and top with the salmon. Serve immediately.
