Mixed tomato salad with burrata is a fresh and vibrant dish that highlights the natural sweetness of ripe tomatoes paired with creamy burrata cheese. A mix of Inca and Datterini vine tomatoes adds depth of flavour and texture, while a drizzle of olive oil and fresh basil enhances the dish with a touch of brightness. Simple yet elegant, this salad is perfect as an appetiser or a light summer meal.
- 600g Inca tomatoes
- 300g datterini vine tomatoes
- 250g burrata
- 1 handful of basil
- Salt & pepper to taste
- 2 tbsp olive oil
- Drizzle of balsamic glaze
- Optional Dressing:
- 100ml olive oil
- 1 tsp of Dijon mustard
- 1 tsp of Hot English mustard
- 2 tbsp of red wine vinegar
- 2 ½ tbsp of honey
- 1 crushed garlic clove
- Salt and pepper to season
- Wash the tomatoes thoroughly under running water and pat them dry.
- Cut the tomatoes into quarters and place them in a salad bowl.
- Tear the burrata into bite-sized pieces by hand and scatter them over the tomatoes.
- Pick the basil leaves from the stems and add them to the bowl.
- Gently mix everything together, ensuring the ingredients are evenly distributed.
- Drizzle with olive oil and balsamic glaze, season with salt and pepper and serve immediately or use an optional dressing.
