These live mussels boast a rich, briny flavour that is quintessentially oceanic. When cooked properly, their flesh is soft, succulent and slightly chewy, offering a satisfying bite without being tough. The natural sweetness of the mussels shines through, especially in simple preparations like moules mariniere, where a quick shallot and white wine stock enhances their delicate taste without overwhelming it. Whether incorporated into a complex seafood paella or a straightforward stew, these mussels absorb surrounding flavours beautifully, adding depth and richness to any dish.
Live Mussels Cooking Suggestions
- Preparation: Prep mussels by removing the beard and any barnacles. Discard any opened mussels before cooking and discard any mussels that are closed after cooking.
- Steaming: Place cleaned mussels in a pot with a small amount of water, wine or broth. Cover and cook over medium-high heat until mussels open, about 5-7 minutes.
- Grilling: Preheat the grill to medium-high. Place mussels on the grate and cook until they open about 5 minutes. Remove immediately to prevent overcooking.
- Boiling: Add mussels to a pot of boiling water or broth. Cook until mussels open, about 5 minutes. Discard any mussels that do not open.
- Sautíing: In a hot skillet, add a bit of oil or butter, garlic and shallots. Add mussels and a splash of white wine. Cover and cook until mussels open, shaking the pan occasionally.
