Shiso leaves have an incredibly tropical citrus flavour and they make the perfect herb for this salmon, which has been flavoured with chilli and finger lime. These limes are wonderfully aromatic and will add pops of citrus once stirred through the fish.
Ingredients
- 1 sushi grade salmon supreme, skinned and diced
- 3 finger limes
- 1 red chilli, finely chopped
- 1 punnet shisho leaves
- 1 spring onion, finely sliced
- 2 teaspoons soy sauce
Method
- Combine the diced salmon, finger lime flesh, red chilli, spring onions and soy and mix well.
- Arrange shiso leaves on a plate and top with the salmon. Serve immediately.
