One of the smallest sturgeon species, these fish typically weigh between 20-40 kg (44-88 lbs) and can live up to 35 years. They reach egg maturity at approximately 7 to 10 years, producing some of the most delicate and refined caviar. Sourced from sustainable farms in Romania and Poland, this sturgeon caviar is cultivated with the highest quality standards while ensuring environmental responsibility.
