Puntarella or puntarelle is commonly consumed raw to maximize its nutritional benefits. It can be dressed with a homemade dressing made from ingredients such as garlic, olive oil and lemon.

Additionally, the leaves of italian puntarelle can be blanched (briefly boiled and then cooled) and then fried in a little oil, garlic and salt. They can also be cooked with a few anchovies for added flavour. This preparation results in a tasty side dish that can be served alongside pasta, salads and other main courses.
