What Makes a Wagyu Steak Different?
Wagyu cattle are well-known for developing dense intramuscular fat, which creates the distinctive marbling that sets a wagyu steak apart from conventional beef. How to Cook a Wagyu Steak
Cooking a wagyu steak well is simpler than you might expect. The key is to let the quality of the beef do the work. For a Japanese A5 wagyu steak, slice it thinly and sear each piece for 30 to 60 seconds per side in a hot, dry pan. The rendered fat provides all the cooking medium you need, so there is no need to add oil or butter. For a thicker wagyu sirloin or rib eye steak, bring the meat to room temperature, season with salt, and cook in a heavy-based pan over high heat to develop a golden crust, then lower the heat to finish. Medium-rare is recommended for most wagyu steak cuts, as it allows the fat to melt gently without overcooking the meat.
Always rest your wagyu steak for at least five minutes after cooking to allow the juices to redistribute evenly through the cut.
