Baserri Aldabia chickens are a true delicacy, raised in the heart of the Basque Country (France) using traditional free-range farming methods. These Basque corn-fed chickens benefit from an extended growth period of at least 91 days, allowing them to develop firm, flavourful flesh. Their diet consists of high-quality French, GMO-free cereals and they are being corn-fed in the final third of their lives, enhancing their natural taste.

The flavour of our free-range corn-fed chicken is deeply satisfying, mildly sweet with a subtle nutty undertone, thanks to its carefully balanced grain-based diet. The meat has a firm yet tender texture, offering a juicy bite that is unlike conventionally farmed poultry. When cooked, it delivers a deep, almost buttery richness with a natural umami depth that pairs exceptionally well with both simple and refined preparations.

Cooking Suggestions: How to Cook Basque Corn-Fed Chicken

  • Roast: Whole with herbs and butter to enhance its natural flavour (at 160°C for 1h 20 min).
  • Grill: Over charcoal or a wood fire for a smoky depth.
  • Slow-cook: Braised or confit-style for extra tenderness.
  • Pan-sear: Perfect for chicken supremes or thighs with crispy skin.
  • Poach: Gentle cooking preserves moisture and brings out delicate flavours.
