Something that has grown in popularity in recent time is micro herbs. We use the term grown quite lightly, because these plants are actually the seedlings of vegetables and herbs, harvested in their early stages of growth.
Also known as microgreens, micro herbs differ from sprouts as they are usually grown in soil and require watering. They tend to be harvested between one and three weeks.
The growing process gives the micro herb a distinctly different flavour to their full grown cousins, and are therefore sought after as a way of adding more tang and panache to dishes.
Beyond their taste, why have microgreens become so popular? One reason is their potential health benefits, as micro herbs contain a high level of antioxidants. There is also research out there that suggests micro herbs contain a higher concentration of nutrients compared to fully grown plants.
