Imperial caviar originates from a hybrid sturgeon, a cross between the Amur sturgeon (Acipenser schrenckii, male) and the Kaluga sturgeon (Huso dauricus, female). Renowned as one of the largest freshwater fish species, they can reach lengths of up to 5.6 meters (18 feet) and exceed 1,000 kg (2,205 pounds) in weight, with a lifespan of up to 60 years. Their eggs require approximately 8 to 10 years to mature, allowing them to develop a rich, complex flavour. Sourced from sustainably farmed sturgeon in China, this sturgeon caviar upholds the highest standards of quality while ensuring responsible aquaculture practices.
