To achieve a beautifully pink meat on the inside, with a caramelised crust, season the meat and drizzle in oil before you cooking in your chosen method, and always let rest for a few minutesbefore serving. Note that the cooking time of the lamb will depend on the thickness of the cutlets.
Lamb cutlets can be paired with traditionaly flavours of mint sauce, or you could try creating a Middle Eastern meal with the flavours of pomegranate, garlic and herbs.
