Chicken Stock

 

Well-made meat stock or jus can make the difference between a spectacular dish and an average one; professional chefs spend hour roasting bones, reducing stock and carefully tending to the liquid to ensure clarity and depth of flavour.

However, not many of us have the time (or inclination) to do this at home! At Fine Food Specialist, we stock a range of professionally made stocks, which allow you to bring the flavours of the best restaurants to your dinner table.

A well-made chicken broth is essential as a base to many dishes, including light but rich gravy for a roast dinner, a nourishing chicken soup, a sauce for noodle dishes, or for adding a flavour boost to rice, couscous or polenta – just replace the usual water with stock for impressive results.

We have both white chicken stock and golden chicken stock – use white chicken stock for making white sauces to accompany light meats such as poultry and game including partridge or quail. Golden chicken stock is richer and deeper in flavour thanks to roasted chicken bones, and can be used when you want a fuller flavour – try it in gravy, paella or pasta sauces.

Chicken glace is the stock base used by professional chefs, made by reducing chicken stock until it is very concentrated. It takes a lot of chicken bones and skill to make a very good chicken glace, which is why we sell it ready-made – simply open the carton and add to your dish for instant depth of flavour.

Our chicken stocks and glace are the perfect ingredients to use in dishes such as chicken with a morel mushroom sauce, or osso bucco with polenta and gremolata.
