Think root vegetables such as celeriac and wintry fruits like quince and plums to pair with this delicious wild game bird. You could also make an unctuous terrine out of the guinea fowl legs or stuff the whole bird for a special roast dinner.

For those unfamiliar with cooking with wild game or guinea fowl in particular, it is slightly similar to chicken however it is slightly drier and contains much less fat. This makes it a great option for braising or stewing until tender. We’d recommend adjusting the typical timings as the guinea fowl is also smaller than chickens.
