Beaufort is an alpine cheese, produced in the French region of Savoie. It is in the same family as the grueyere, made from unpasteurised cow’s milk. It’s AOC status means that the cheese can only be made from a single herd of mountain cows in Savoie. It has a firm, creamy texture, and the flavour is a little fruity, with caramel undertones. The mould that the Beaufort is made in gives it it’s unique concave edge. Delicious cheese to pair with a glass of champagne, and also works amazingly well used in traditional French fondues.
