Porcini mushrooms, also known as ceps, are the king of all mushrooms. They are meaty, rich and very versatile. They work best cut up in slices and pan fried in olive oil and butter. Finish with a chiffonade of parsley and a touch of truffle oil. Serve on sourdough toast and you will be very happy.
Origin: Sweden
Availability: June-December
These mushrooms are a wild product and, as such, sometimes arrive covered in a little dirt. This is harmless and can be cleaned off using a soft mushroom brush.
Please note porcini will sometimes arrive sliced in half to ensure that they are of top quality.
