Directions
Step 1, Preheat the oven to 180C.
Step 2, Heat a frying pan and add a thick slice of butter. Add the onions and a pinch of salt, and cook over a very low heat until caramelised, stirring often (around 40 minutes).
Step 3, Lightly beat the eggs and add the cream. Season very well with pepper and a little salt. Once the onions are cooked, add them to the mixture along with the cheese and onions already salty. Add the chives and mix well.
Step 4, Divide the mixture between the tart cases, taking care not to overfill.
Step 5, Cook for 20 minutes and allow to cool before serving.
