Try these venison burgers if you fancy something different from the usual beef - they’re leaner but full of rich flavour. We like to keep the flavours simple with a mustardy mayonnaise and some grilled onion and pea shoots .Watercress or other peppery greens would also be lovely

2 venison burgers

2 brioche buns
- 2 thick slices from 1 onion

1 tomato, sliced
- 2 teaspoons Dijon mustard
- 2 tablespoons mayonnaise

2 handfuls pea shoots
Directions
Method
- Step 1, Cook the burgers by heating a heavy based frying pan (preferably a cast iron griddle) or barbecue.
- Step 2, Add a little oil and the burgers and cook for around 5 minutes each side, or until cooked through. Grill the onion slices in the same pan until soft and lightly charred.
- Step 3, Toast the buns and spread with the mayonnaise. Add the pea shoots, top with the burgers, onion and tomato. Close the buns and serve.
