Imperial caviar was so called because traditionally it was the very best eggs of the catch, often only legally available to the Tsars. Our Imperial caviar is no different - we look for both colour and size when grading the caviar. The size of Imperial will always be good, the texture of the egg always firm, and the taste nutty and mineral on the palate. Imperial Caviar is one of our finer caviars.
