The Japanese scallops are the most sought after seafood product from the country, consistenly chosen and praised for their unbelievable flavour, size and quality. There are a few different scallop farming methods in Japan, of which one is the 'hanging method'. This involves the scallops being suspended in sea-water on ropes, or in baskets for up to three years.
They have not been soaked or treated like other scallops often are, because these scallops are of a superior quality and need little else to enhance their delicious flavour. Try pan-frying in seaweed butter or serving as a sashimi dish to enjoy the melt-in-the-mouth texture of these wonderful scallops!
