Serving 2-3 people, this wonderful Hereford beef is dry aged for 28 days on a salt wall, greatly enhancing its flavour, making it deliciously rich and almost buttery. The sheer size of the ribeye means that it should be seared before cooking and finishing in the oven. Alternatively, for a more smokey flavour, grill it on the bbq, then finish it in the oven.
