Honey Truffle, Fresh

The honey truffle is a rare and unusual variety that is quite different to the more familiar black and alba white truffles. The crisp, white flesh is beautiful shaved over desserts and lends a surprisingly sweet flavour to dishes. The saccharine quality makes it a wonderful way to add depth and layers of sweetness to ice creams, cakes, or mousses.

Try pairing the honey truffle with goat's cheese or goat's curd and honey for a delicious savoury-sweet combination. The truffle thrives in the sandy soil along the River Danube in Hungary and Croatia and is hardly found elsewhere in the world.

How to clean and keep fresh truffles

The truffles we deliver are so fresh, they may still have a fine covering of soil or sand from when they were first unearthed. Washing them under a cold tap for a few seconds, then drying them gently, won’t affect the truffle’s flavour.

We advise to consume our fresh truffles within 3 days of receiving.

Once they have been gently cleaned, wrap each truffle individually in a fresh sheet of kitchen paper towel. Place the wrapped truffles in a clean, airtight plastic or glass container, such as a flip-top jar with a tight seal.
Change the paper towel every morning and re-wrap the truffles. Put them back in their container and refrigerate, repeating the process until you are ready to use them.

We suggest keeping fresh truffles in the coolest part of the fridge, ideally at 1 to 2°C, but be careful not to freeze them!
