If you are looking to prepare a fresh, aromatic tartare, don't feel you need to add too many extra flavours because this salmon can speak for itself. You should stick to simple but statement flavours such as citrus zest, finely diced shallots, gherkins or capers and some aromatic extra virgin olive oil with a generous seasoning of fleur de sel and white pepper. Marinade for at least 15 minutes before serving.
