Turbot is highly prized for its exquisite flavour and farming this fish has proved very successful in recent years. Turbot has a lighter skin that its wild cousins, but the flesh is firm and deliciously delicate in flavour. Try pan frying turbot in foaming butter and serving it with smooth and creamy truffled pomme purée.
These fillets come from a farmed turbot that is approximately 2-3kg when whole.
