Oysters with Blood Orange and Ginger

Fresh oysters are hard to beat and it’s best to dress them simply. We love this combination of ruby blood orange, ginger and rice vinegar, which adds just the right amount of sweetness, spice and acidity to complement the oysters without overwhelming them.

  1. Juice one of the oranges and combine the juice with the ginger and rice vinegar in a bowl.
  2. Peel and segment the second orange, and finely dice the flesh. Add this to the bowl and stir to combine.
  3. Open the oysters and arrange them on a plate. Serve immediately with the blood orange and ginger dressing.
