Abalone is a type of sea snail that is highly valuable for its meat, which is considered a delicacy in many cultures. The meat of this seafood is tender and has a delicate, slightly sweet flavour. 

Abalone can be eaten raw (as they are sashimi grade) cooked or dried and is often used in sushi and sashimi dishes. Abalone is also used in traditional Chinese medicine and is believed to have health benefits such as improving circulation and reducing inflammation. 

The body of the Abalone is large and fleshy and their shells are rough, rather flat and ear-shaped. This Australian sea snail, which is also known as ormer in Britain is particularly meaty and when slowly cooked, it provides the most amazing flavour to any dish.

The shell of Abalone is also used for decorative purposes and jewellery making. Abalone is found in coastal waters around the world and is typically harvested by divers.
