Wild Sea Purslane, +/-250g
Sea purslane, also known as ‘mermaid’s kiss’ is perfect to use as a garnish with fish or red meat, due to it’s vibrant green colour and salty flavour.
Sea purslane is extremely salty when it is eaten raw – when it is blanched or steamed, some of the salty flavour is expelled. The amazing texture of sea purslane will be lost if cooked for too long though so make sure to only briefly boil or steam!
Experiment further with this delicious foraged herb, and try making a sea-side pesto with salty flavours of the sea..
