Burrata Maldera with Pistachio Dukkah

Is there anything better than creamy soft burrata? This cheese is a perfect base for strong flavours and we like to add dukkah, which is an Egyptian and Middle Eastern seasoning full of nuts and spices. Serve this drizzled with your best extra virgin olive oil and plenty of warmed flatbread or toasted sourdough for scooping up the cheese.

250g Burrata Maldera

50g shelled pistachios

1 teaspoon cumin seeds

1 tablespoon coriander seeds

1 tablespoon sesame seeds

2 teaspoons mild chilli flakes

1 tablespoon flaky sea salt

Toast or flatbreads, to serve

Extra virgin olive oil
Directions
Step 1, Lightly toast the cumin and coriander seeds in a dry pan until fragrant. Set aside.
Step 2, Lightly toast the sesame seeds. Set aside.
Step 3, In a pestle and mortar, roughly crush the pistachios and place in a bowl. Roughly crush the cumin and coriander seeds and combine with the pistachios. Add all the other ingredients except the burrata, and mix well.
Step 4, Serve the burrata split open and sprinkled with the dukkah. Drizzle with extra virgin olive oil. Serve the remaining dukkah and toast on the side.
