Shiso leaves have an incredibly tropical citrus flavour and they make the perfect vessel for this salmon, which has been flavoured with chilli and finger lime. These limes are wonderfully aromatic and will add pops of citrus once stirred through the fish.
- Combine the diced salmon, finger lime flesh, red chilli, spring onions and soy and mix well.
- Arrange shiso leaves on a plate and top with the salmon. Serve immediately.
