This veal stock reduction can be thickened using a veal or beef jus, depending on what you are using the veal jus and the desired texture. Similarly, you could reduce this stock down further with freshly chopped shallots, a little wine and a dash of double cream to make a delicious sauce to pour over a steak, or to add to a fresh pasta dish.
