This olive oil comes from the best olive crops in Italy, from the hills of Firenze. This extra-virgin olive oil is so good that it has won the Gambero Rosso food awards! The name of the oil comes from its’ stunning location, as the oil originates from the tower of Rocca di Cervaia, which is surrounded by olive orchards. The Gonelli family have been producing olive oil there for almost 500 years, in the oldest mill in Italy, in the centre of Chianti. There is a lot of respect for the environment and the processes involved in obtaining the olive oil from around this territory, as it dates back to the 12th century. The olive is harvested at the perfect stage of ripening, where they are then crushed and cold-extracted, and finally bottled. The olive oil is also stored in a controlled temperature to maintain the fine quality of the oil.
The work that goes into making this olive oil results in a green and slightly golden oil, which tastes fruity and well-rounded. It is the perfect olive oil to use in dressings for salads, as well as making focaccia or drizzling over fresh buffalo mozzarella.
