Mango and Lamb Burgers

These mango and lamb burgers are perfect for the BBQ or cooking indoors in a hot griddle or frying pan. We have added mango for pops of sweetness, which works so well with the juicy lamb. Just add buns, salad and condiments!

  • 4 mango and lamb burgers
  • 4 brioche buns
  • Finely sliced red cabbage
  • 2 spring onions, sliced into thin strips
  • 1 small handful mint leaves, finely chopped
  • 1 small handful coriander leaves, finely chopped
  • A squeeze of lime juice
  • A splash of olive oil
  1. Heat a BBQ or frying pan and cook the lamb burgers for around 5 minutes each side, or until just cooked through.
  2. Combine the chopped herbs with some lime juice, olive oil and salt and pepper and set aside. The sauce should be runny enough to make a sort of ‘sauce’ for the burgers.
  3. Toast the buns and layer up with some of the red cabbage, spring onions, the burgers and the herb sauce. Serve immediately.
