To make guacamole: Cut the chilli in half lengthways through the stem. Scrape away the seeds and finely dice. Finely slice the cherry tomatoes, shallot and garlic clove. Chop a bunch of coriander (both stems and leaves) finely. Zest the lime and set aside.
Prepare the avocados: Cut the avocados in half, remove the seed and scoop out the flesh into a mixing bowl.
Mix the guacamole: To the bowl of avocado, add the diced chilli, sliced tomatoes, shallot and garlic. Add the finely chopped coriander and lime zest. Season with salt and pepper. Squeeze the juice of the lime over the mixture. Drizzle in the olive oil. Using a fork or a potato masher, mash the ingredients together until you reach your desired consistency. Mix well to combine all the flavours.
