1 kg new potatoes such as Jersey Royals
50g mayonnaise
3 tablespoons finely chopped chives
Truffle dust
Summer truffle

Method

Step 1, Cook the potatoes in boiling salted water.
Step 2, Combine with the mayonnaise and chives and season with more salt (if needed) and pepper.
Step 3, Stir in some of the truffle dust and top with plenty of shaved summer truffle.
