Perlagrigia Sotto Cenere with Truffles , +/-3kg
Perlagrigia sotto cenere al tartufo is a soft, compact Italian cheese which has black truffle flakes inside. It is ripened for a short period of time after which the rind is washed and treated with extra virgin olive oil, spices and natural truffle flavour. Finally the cheese is covered with a specific mix of spices and natural ash from beech wood. Perlagrigia is aromatic, slightly spicy and possesses a sharp earthy truffle flavour. This exciting artisan cheese can be enjoyed as part of a cheese board or on its own with a glass of wine.
