It’s BBQ season! When the sun is out there’s nothing better than kicking back with friends in the garden, grill sizzling in the background. Of course, at Fine Food Specialist, we don’t just chuck any old meat on the BBQ: we have spent time sourcing the finest BBQ products, yakiniku meats and burgers to ensure the very best results. Isn’t it about time you moved your BBQ game up a gear?

Cooking meat on the BBQ is simple when you have the right cuts, correctly prepared. We have a wide range of BBQ meats that have been expertly prepared by our own in-house butcher so that they are optimally cut for outdoor cooking. 


Wagyu Beef


One of our top selling products is Wagyu beef. Sourced from the Gunma prefecture of Japan, this outstanding meat is prized around the world for its high fat content and large amount of marbling. This melts as the beef cooks, keeping it very tender and of course, tasting incredible too. 

There are different grades and marble scores for Wagyu, which are determined by the amount of quality meat produced, and the amount of fat marbling present. When it comes to cooking Wagyu on the BBQ, you can’t go wrong with Wagyu steaks. Smaller steaks work for one or two people, although if you are cooking for a crowd, it makes sense to choose a large cut like this Wagyu Tomahawk, cook it offset on the barbecue and slice it up so that everyone can help themselves - those who like their steak a little more cooked can select a piece from the edge of the steak (it will be rarer closer to the bone).

BBQ Sausages 

We have an exciting range of sausages for the BBQ in our shop, which is a cut above the standard hot dog selection! Leave those sad, floppy franks behind and check out our Italian pork sausages, with or without fennel seeds - these are beautiful when cooked on the barbecue and served with a tomato and nasturtium salad or some ciabatta rolls and romesco sauce. Those who like a bit more spice should check out our fennel and chilli sausages

Lamb 

Most people don’t think to cook lamb on the barbecue that often but it’s perfect for grilling or even cooking low and slow. We stock PGI Cornish lamb here at Fine Food Specialist - these animals must get at least 70% of their food from foraging, and be raised only in Cornwall. PGI status not only indicates the criteria that must be fulfilled but is also an indicator of quality and flavour - think of a terroir for wine and you will get the idea. Not all lamb tastes the same as Cornish lamb! 

Try our PGI Cornish lamb rack for a quick-cooking cut, or a lamb leg for something larger - this can be butterflied and rubbed with mint, garlic, anchovies and olive oil then cooked on the barbecue for 20 minutes before resting and slicing. Try serving it with a big salad for everyone to help themselves, like this one with lentils, baby chard and goats’ cheese. 

 

Iberico Pork 

Iberico pork is some of the most highly sought after pork in the world thanks to its incredible density of fat marbling, which of course means it tastes fantastic. These Iberico Bellotta pork chops are made for the barbecue and are full of flavour; the pigs snuffle the forest floor, foraging for acorns and it’s this rich diet that makes such exceptional meat. 

 

Spatchcock Chicken 

Cooking chicken on the barbecue has never been simpler - just try one of our spatchcock chickens. This technique simply involves butchering the chicken so that it can lay flat on the barbecue, ensuring even cooking. Our in-house butcher has taken care of this for you, so all you need to do is cook! Try our herby spatchcock chicken with Caesar salad, or one of our poussin if you need something a little smaller. 

 

Quails 

Try spatchcock quails if you want something a little bit different; these birds may be small but they pack a lot of flavour and are very quick to cook. 

 

Yakiniku

Yakiniku means ‘grilled meat’ in Japan, and refers to bite-size pieces of meat that are cooked quickly over charcoal. A small, specialist type of grill is used - have a look at our medium-sized yakiniku grill, which is perfect for cooking cuts of seafood, meat such as steaks and skewers, all in the traditional Japanese way. You will need a good quality, clean-burning charcoal such as binchotan, that won’t taint the flavour of your food. 

We have a range of specially prepared yakiniku cuts of Wagyu beef - specially prepared for easy cooking on the yakiniku grill. You will be amazed at how tender and full of flavour these pieces of meat can be. 

 

Burgers 

Nothing is as satisfying as a burger when the craving strikes. At Fine Food Specialist, we have a range of premium burgers including Wagyu burgers, Iberico pork burgers, venison burgers and chicken burgers. Try layering up your burgers with interesting sauces, such as this Iberico pork burger with Manchego and crispy onions, or try one of our flavoured burgers - we love lamb, chilli and coriander, and chicken with chilli.
