The shoulder cut, including the oyster blade, of the Wagyu beast is often overlooked as a cut, but these are some truly delicious cuts that are versatile, and a fabulous way to serve Wagyu at a dinner party!

Our Grade 2 Wagyu cuts are slightly less marbled, but still extremely flavoursome and tender parts of the shoulder. These are amazingly marbled cuts of Japanese Wagyu, which we recommend cooking them on a grill or BBQ, or using one of our Yakiniku clay barbecues (a small portable barbecue that can be used indoors or outside)!  

As these pieces may be a little thicker  than our Grade 1 pieces, it may be required to grill for a little longer. You could also use these cuts for Shabu-Shabu, which is a Japanese method of cooking, where the meat is cooked by boiling ingredients  in a broth, often made up of a kombu or kimchi base. After the meat has been cooked in this way, there are usually a choice of sauces to dip the meat (or vegetables) such as ponzu, or a sesame-based sauce.

These yakiniku slices may only require a little seasoning, as the natural flavour of the meat will shine through after a few seconds of being cooked.
