Te Mana Lamb Rack, French-Trimmed, 8 bone, Frozen, +/-650g
Te Mana Lamb is a revelation in the restaurant world and is a highly-regarded delicacy from the homeland of quality lamb. The name ‘Te Mana’ means prestige and authorty in Maori, which is fitting as the meat has been described as ‘food from heaven’. The lamb is unique as it is made up of a different type of intramuscular fat than regular lamb, which is higher in Omega-3 and polyunsaturated fats, and micro-marbling.
The high Omega 3 content is a product of the lambs being fed on chicory pastures for thirty days.
The lambs are raised in New Zealands’ hills and high country on the South Island, where there are only seventeen permitted farmers that have been given the opportunity to farm this special lamb. The conditions of the land here, and the state-of-the art- farming practise results in is a more versatile meat which retains its’ shape and texture throughout the cooking process, and is less prone to shrinking.
