Depending on seasonality and availability, we have Tropea Rosso onions from the Southern coast of Italy, or Red Grelot onions from France. Both varieties are very similar and are uniquely characterized by their bulbs growing in bunches, with long stalks that can be used as you would use a chive or leek. The deep red colour of the onion is maintained when cooked, as is its' sweet taste. These onions taste fantastic raw in salads, or equally delicious used in soups and sauces. Why not try them sliced and served with a drizzle of olive oil and freshly shaved parmesan?
