These tender little squid are already cleaned and ready to use. Typically found in Spanish tapas or tossed in spices in a Chinese stir-fry, the baby squid are so versatile and quick to cook. Try frying them coated in a light tempura batter and served with a squeeze of lemon – so simple and so delicious. For something a little more unctuous, braise gently in a rich stew until they’re melt-in-the-mouth soft. All that’s needed is a hunk of crusty bread to mop up the sauce.
