An interesting twist on the classic allioli, black garlic allioli is deliciously sweet, earthy and pungent. Black garlic is made by fermenting regular garlic bulbs for a number of weeks to achieve a sweeter but nonetheless garlicky taste. This dark and exotic black allioli is creamy, tangy and rich in flavour, produced with a extra virgin olive oil and a touch of lemon juice. Pair this wonderful Spanish creation with grilled vegetables, fish and meat, or alternatively serve it as an ideal dipping sauce for tapas-style dishes.

Ingredients: Sunflower oil, cream of black garlic (15%), water, dehydrated egg, dehydrated egg yolk, olive oil, salt, lemon juice, fresh black garlic
